This is by far one of my favorite soups of all time. It's one of my most requested recipes, and I can't believe I haven't thought of adding it to my blog until today. I think what makes this soup so wonderful is that it's really different from most soups in people's recipe collections. The ingredients and flavors are unique, and they come together to make some very delicious soup!
8 slices bacon, chopped
2 onions, chopped
1 package cole slaw mix
4 cups beef or chicken broth
1 cup canned crushed tomatoes
1/4 cup raisins
2 tablespoons (packed) brown sugar
2 tablespoons lemon juice
1/4 teaspoon caraway seeds
Freshly ground pepper to taste
In a large saucepan, cook bacon until crisp; drain off most fat, leaving a couple teaspoons in the pan. Add onions and saute until golden, about 5 minutes. Add remaining ingredients plus 2 cups of water, and bring to a boil. Reduce heat and simmer, covered, stirring occasionally, for 1 hour. Makes 6 servings.
